Artichoke Spinach Spread


Great For the Sunday Football Crowd!


This quick and easy recipe is perfect for your family and guests.  Serve with tortilla chips, baguette or some pita bread.

ARTICHOKE SPINACH SPREAD


1 package (10 oz.) frozen chopped spinach,
   thawed and squeezed dry
1 package (8 oz.) cream cheese, softened
3/4 cup grated Parmesan cheese
1/4 cup mayonnaise
1 tsp. fresh lemon juice
1/4 tsp. ground red pepper
1/4 tsp. garlic powder
1 jar (14.75 oz.) CARA MIA marinated artichoke hearts,
         drained and chopped.


In a large bowl, combine all the ingredients; mix well. Spoon into a microwave-safe 9-inch pie plate and heat in the microwave (80% power) for 3 minutes. Serve immediately. 

Serves 5-6

Artichoke Vinaigrette



Trired of the same old dressings?  This artichoke vinaigrette goes great on crisp iceberg lettuce, romaine, mixed greens and spinach.

2 (6.5 oz.) jars CARA MIA Marinated Artichoke Hearts
1 (2 ounce) jar sliced pimientos, drained
1/4 cup STAR white wine vinegar
2 Tbsp. chopped sweet pickle
1 Tbsp. sweet pickle syrup
1/4 tsp. oregano, crumbled
1/4 tsp. basil, crumbled

Turn artichokes and marinade into glass bowl.  Add pimientos, vinegar, pickle and pickle syrup and herbs, and mix lightly.  Chill 30 minutes or longer to blend flavors.  Serve over crisp lettuce.

Serves 4.
