Artichoke Vinaigrette



Trired of the same old dressings?  This artichoke vinaigrette goes great on crisp iceberg lettuce, romaine, mixed greens and spinach.

2 (6.5 oz.) jars CARA MIA Marinated Artichoke Hearts
1 (2 ounce) jar sliced pimientos, drained
1/4 cup STAR white wine vinegar
2 Tbsp. chopped sweet pickle
1 Tbsp. sweet pickle syrup
1/4 tsp. oregano, crumbled
1/4 tsp. basil, crumbled

Turn artichokes and marinade into glass bowl.  Add pimientos, vinegar, pickle and pickle syrup and herbs, and mix lightly.  Chill 30 minutes or longer to blend flavors.  Serve over crisp lettuce.

Serves 4.

Cara Mia brand was started by an artichoke grower co-op in 1955, in the “artichoke capital” of the world, Castroville, CA. The co-op opened as a freezer operator with the intent of providing consumers another means to enjoy the edible thistle all year around. The venture proved so successful that a marinating line was added in 1958.
