Fried Artichoke Hearts in Grapeseed Oil

Deep-fried artichoke hearts. Best when served with a rémoulade style dip. Makes a great finger-food appetizer and the lime gives it a fresh summer taste.
Ingredients
14 oz jar Cara Mia Artichokes Hearts in Water drained
Star Grapeseed Oil for frying
1/2 cup chopped parsley
1 lime sliced thin
salt & pepper to taste
Directions
In a medium pot, pour just enough Star Grapeseed Oil so that it is about an inch deep. Add the artichokes, lime, salt and pepper making sure that they are covered by the oi. You may need to do this in several batches.
Fry uncovered for approximately 5 minutes, turning over the artichokes and lime slices midway. They are done when brown and crispy. Remove the artichokes and lime slices from the pot and place them on paper towels flat side down. Sprinkle with parley, salt and serve.
Serve hot, with rémoulade for dipping.

- Cara Mia brand was started by an artichoke grower co-op in 1955, in the “artichoke capital” of the world, Castroville, CA. The co-op opened as a freezer operator with the intent of providing consumers another means to enjoy the edible thistle all year around. The venture proved so successful that a marinating line was added in 1958. Soon sales of the marinated produce far surpassed the frozen line as consumers enjoyed the proprietary marinade that dressed the tender leaves. The Borges Group acquired Cara Mia and its proprietary spice mix/marinade recipe in 2001. Today Cara Mia is the #1 selling brand of marinated artichokes.
